The York variety is the most productive. It also gave the largest fruits, of a dark burgundy color, but less sweet, with a neutral flavor.
The Canadian elderberry is a magnificent shrub, productive and decorative. It is fast growing and produces fruit in the fall (August-September).
It is a self-fruitful shrub that benefits from being grown with different cultivars. The fruit is edible cooked or dehydrated. The cultivars offered have the characteristics for an interesting commercial production but also ornamental. It is often used as a natural coloring agent and in the manufacture of juice mixtures.
The flowers, white and fragrant, are used in decoction for their emollient, soothing and skin softening properties. In infusion, the flowers of elder promote perspiration and are recommended to fight effectively against the flu, colds or chills.
